Hyderabadi Biryani

This Hyderabadi Biryani is a fragrant, layered rice preparation where long-grain basmati rice is cooked on dum with a richly spiced masala. Ingredients for Hyderabadi Biryani

For the Rice

  • Basmati rice (soaked for 30 minutes) – 1½ cups
  • Water – as required
  • Bay leaf – 1
  • Green cardamom – 2
  • Cloves – 3–4
  • Cinnamon stick – 1 inch
  • Salt – to taste

For the Biryani Masala (Veg / Chicken)

  • Mixed vegetables or chicken (medium pieces) – 2 cups / 500 g
  • Oil – 3 tbsp
  • Ghee – 2 tbsp
  • Onions (thinly sliced) – 2 medium
  • Ginger-garlic paste – 2 tsp
  • Green chillies (slit) – 2
  • Fresh yoghurt – ½ cup
  • Qora Biryani Masala – 1½ tbsp
  • Qora Turmeric Powder – ½ tsp
  • Fresh coriander leaves (chopped) – 2 tbsp
  • Fresh mint leaves (chopped) – 2 tbsp
  • Saffron strands – a few
  • Warm milk – 2 tbsp
  • Salt – to taste
  • Water – as required

How to Make Hyderabadi Biryani

Cook basmati rice in boiling salted water with whole spices until it is 70% cooked. Drain and keep aside.

Heat oil and ghee in a heavy pan. Add sliced onions and sauté until golden brown. Add ginger-garlic paste and green chillies; cook until aromatic.

Add vegetables or chicken and sauté briefly. Stir in yoghurt, Qora Turmeric Powder, and Qora Biryani Masala. Cook until the masala is well blended and lightly glossy.

Soak saffron in warm milk and set aside.

In a heavy-bottomed pot, layer cooked rice and biryani masala alternately. Top with chopped coriander, mint, and saffron milk.

Cover tightly and cook on low heat (dum) for 10–12 minutes until the flavours meld and the rice is fully cooked.

Rest for 5 minutes before opening. Gently fluff and serve hot.
