This Sambhar is a comforting South Indian lentil curry where slow-cooked tur dal and seasonal vegetables are simmered with tamarind and aromatic spices. Ingredients for Sambhar
For the Dal & Vegetables
- Tur dal – 100 g
- Mixed vegetables (drumstick, pumpkin, brinjal, carrot, onion) – 2 cups
- Water – as required
- Salt – to taste
For the Sambhar Base
- Tamarind – 1 small piece
- Qora Sambhar Masala – 1 heaped tbsp
- Qora Turmeric Powder – ½ tsp
For Tempering
- Oil – 2 tsp
- Mustard seeds – 1 tsp
- Curry leaves – a few
- Dry red chilli – 1–2
How to Make Sambhar
Wash and cook tur dal with mixed vegetables, turmeric, salt, and water until soft and well cooked. Lightly mash the dal and vegetables together and set aside.
Soak tamarind in warm water for 10 minutes and extract the juice.
Add tamarind extract and Qora Sambhar Masala to the cooked dal. Mix well and simmer for 5–7 minutes until the sambhar reaches a balanced, pourable consistency.
Heat oil in a small pan for tempering. Add mustard seeds and allow them to crackle. Add dry red chillies and curry leaves and sauté briefly.
Pour the tempering over the sambhar, mix gently, and remove from heat.
Serve hot with idli, dosa, vada, or rice.
